Can It Up: February (and a Giveaway!)

Welcome to February!
Are you ready for another month of Can It Up? And a new selected ingredient? Last month’s player’s choice was fun…but a bit overwhelming!
Let’s Can It Up!
- First, review the Can It Up ground rules.
- During the month of February (that means up to February 28th), please either link your post to this post using the tool below; email me your post or photo; post your post or photo in the Comments section of this post; or tweet your post or a photo using our hashtag #CanItUp. Or you can do all four! I will do a round-up on March 1st.
- Please mention Can It Up and link back to this post.
- To include your photo in the monthly roundup post, email it to me by February 28th. It must be at least 670 pixels wide and oriented horizontally (i.e. landscape).
- Don’t forget that your preserve must be water-bath canned. Read up on water-bath canning.
February’s selected ingredient is carrots! Carrots should be your preserve’s shining star!

I love the carrot theme… my job is trying to develop better carrots, including the growing area of colored carrots. I also love to can anything I can get my hands on. We’re crazy busy right now at work harvesting fresh carrots… hopefully I can find some time before the end of the month to make something for your contest. Regardless, I look forward to seeing all of the entries.

I grow most all my vegetables, but have never grown the different color carrots. Think this year might just be the first.

I am so happy to discover your site! I have canned a little for years but really did it in earnest this year. Just canned Orange Cranberry Chutney (http://artofnaturalliving.com/2014/02/05/orange-cranberry-chutney-winter-preserving/) since I had to do some winter canning too!
